Chia Bircher with Berry Compote

Chia seeds make an excellent breakfast because they’re nutritious, filling and can be soaked the night before so they’re ready in the morning. You can make a batch and portion them out into jars and top with fresh fruit, coconut yogurt and your favourite granola.

Ingredients

For the Chia Bircher
1/2 cup rolled oats (use gluten-free if needed)
1/4 cup chia seeds 
2 tbsp ground flax seeds
1/2 cup almonds
2 1/2 cups filtered water
2 tbsp Earth Cacao
1 tbsp vanilla
2 tsp cinnamon
Pinch of sea salt

For the berry compote
1 cup frozen berries 
1/2 filtered water
1 tsp agar agar or arrowroot to thicken
1 tsp vanilla
Pinch of sea salt

Method

  • Combine oats, chia and flax seeds in a bowl and set aside
  • Blitz the almonds, cacao, water, vanilla, cinnamon and salt in a blender to make almond milk
  • Pour onto the mixture, stir and leave for half an hour
  • Meanwhile prepare the compote by adding all the ingredients except the agar agar to a small pan stirring on a low heat
  • Dissolve the agar agar or arrowroot in a splash of water then add to the simmering pot 
  • Simmer for 15 minutes then set aside to cool
  • Blend the mixture to make a compote then serve on top of the chia bircher with fresh fruit and your favourite toppings
